This is one of a favorite snack for my family.My son likes to munch this snack while watching his favorite shows in T.V and easy to make.I make this one very often and store it.There are lot of proportions for this recipe and I tried many versions ,but the following one is very crunchy and liked by all my family members.
Ingredients
- Rice flour -3 cups
- Gram flour(besan) -1/2 cup
- Roasted gram flour(pottukadalai ) -3/4 cup
- Chilly powder - 2tsp
- Garlic - 4 to 6 pods
- Salt -2tsp
- Ghee-4tbs
- Asafoetida - a pinch
- Water to knead
- Oil for frying
Method
Put the pottukadalai in the mixie and make it into a fine powder.Sieve all the flours and mix it well.Make the garlic into a very fine paste and filter it with a tea strainer, so that it won't get struck while squeezing .Add in ghee,garlic paste.chilly powder,asafoetida to the flour mix and make into a soft dough by adding water.
Heat oil in a pan and keep it in the medium flame.Meanwhile fill the murukku maker with the dough,with ribbon pakoda blade.Once the oil is ready squeeze the dough into the oil directly in a circular manner.Let it cook for a minute then flip it to otherside and cook till the bubbles are completely stopped.
Take out the cooked pakodas and drain it in a paper towel.Repeat the process for the rest of the dough.
Once all the pakodas are cool down,crumble it to make it into small pieces and store it in an air tight container.Enjoy this crispy and crunchy pakodas anytime in a day.
- Using garlic paste is optional but it gives a very nice flavor.
- Turmeric powder can be used to give a nice color.
- Ghee can be substituted with butter or hot oil.
- Sprinkle some water to the dough if it is hard to squeeze.
