Rava kesari

Since this is my first post ,I like to start  with a sweet dish.Rava kesari is a simple sweet, which is my family's all time favorite.Here is the recipe..


  1. Rava(semolina)-1cup
  2. Sugar- 2cups(or according to taste)
  3. Ghee -3/4cup
  4. Cardamom powder -1/2 tsp
  5. Orange or yellow color -a pinch
  6. Water -2 to 21/2 cups.
  7. Saffron -2 to 3 strands (optional)
  8. Cashews and raisins.
  • Put a pan in the stove and add half of the ghee and roast the rava to golden color or till you get a nice aroma.
  • Meanwhile boil the water in a separate vessel.Once the rava is fried add the hot water and color and stir it till the rava gets cooked.
  • Add the sugar and stir it vigorosly to avoid lumps,then slowly add the ghee and stir it till it becomes thick. Finally add the cardamom powder and turn off the stove.Fry the cashews and raisins in a tsp of ghee and add it to the kesari and mix well.
  • Delicious sweet is ready and serve it warm.

  • Adding saffron gives a nice smell.
  • Amount of water depends on the size of tha rava,always keep some hotwater in reserve.
  • Rava needs to be fried in the medium flame otherwise it may turn brown without frying.
