Egg masala

My husband is a egg lover.He likes to eat egg in any form,I make  this recipe in the weekends if I run out of veggies and this a feast for him.The recipe follows

Ingredients
  1. Egg- 8nos.
  2. Onion-2 medium sized
  3. Tomato-3 medium sized
  4. Ginger garlic paste-1 tbs
  5. Chilly powder-1tsp
  6. Coriander powder-2tsp
  7. Garam masala-1/2 tsp
  8. Fennel seeds(sombu)-1/2 tsp
  9. Coriander and curry leaves
  10. Salt to taste
  11. Oil-3tbs

To grind
  1. Coconut-3tbs
  2. Fennel-1 tsp

Method
  1. Boil the eggs , remove the shell and make 2 slits on the top and bottom of the egg.
  2. Chop the onion and tomatoes.
  3. Put oil in a pan and season it with fennel seeds.
  4. Fry the onion till it becomes transparent and add ginger garlic paste.
  5. Add in tomatoes, curry leaves,salt and fry it till it becomes mushy.
  6. Now add all the powders and fry it for a minute.Care should be taken at this stage not to burn  and add 1/2 cup of water to it.Let it boil for 2-3 mins .
  7. Then add in coconut paste and allow it to cook till the raw smell goes off.
  8. Add the boiled eggs and cook it till the gravy become thick. Switch off the stove and garnish it with coriander leaves.
  9. It goes with rice,roti,naan,parota and rice varieties.

  • Garam masala can be replaced by adding cloves and cinnamon in the seasoning.
  • Kulambhu milagai powder can be used instead of chilly and coriander powder.
  • Adding a tsp of lemon juice at the end gives an extra taste to the recipe
